Ingredients
- 1 large lime
- 6 tablespoons peanut oil
- 2 tablespoons asian fish sauce
- 1 tablespoon sugar
- 600g pan-seared chicken
- 1 or 2 napa cabbage/chinese leaf, shredded/thinly sliced
- 4 green onions, chopped
- 1/4 cup, fresh coriander, chopped
- salt & pepper to taste
- 1/4 cup roasted peanuts, chopped
Directions
- Pan sear chicken
- Grab a bowl, zest and juice entire lime into it, add the oil, fish sauce, sugar, and whisk together.
- Grab a larger bowl, combine the chicken, cabbage, spring onions and the corriander, toss and add salt and pepper in layers to season everything.
- Drizzle the vinaigrette and toss again, coating everything evenly.
- Divide onto bowls and sprinkle the roasted peanuts.
